Salt and pepper prawns with asparagus

Ingredients

  • 1 egg white
  • 2 clove garlic, finely diced
  • 2cm ginger, finely diced
  • 16 green prawns, peeled and deveined
  • 1 bunch asparagus, cut into 5cm pieces
  • 60g cornflour, made from corn
  • 1 tablespoon sea salt
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground black pepper
  • 1 teaspoon caster sugar
  • 1 small chilli, finely diced (optional)
  • vegetable oil for frying
  • 1 tablespoon coriander leaves, chopped

Method

  1. Lightly whisk the egg white in a large bowl and then add the garlic, ginger, prawns and asparagus
  2. Toss to combine, cover and marinate for at least an hour
  3. Mix together the cornflour, salt, peppers, sugar and chilli
  4. Heat the vegetable oil in a deep sided fry pan until hot
  5. Dip the prawns and asparagus into the spiced flour, deep fry until golden and drain on kitchen paper
  6. Sprinkle with chopped coriander and serve with steamed rice and soy sauce
