Ricotta fritters with honey and fresh figs

Ingredients

  • 450g fresh ricotta
  • 4 eggs
  • 100g plain flour
  • 2 lemons, zested
  • 50g caster sugar
  • 40g melted butter
  • vegetable oil for cooking
  • 1 teaspoon ground cinnamon
  • 100g caster sugar
  • honey
  • fresh figs

Method

  1. Making the batter is a great job to get the kids to do
  2. Whisking can be a wonderful way to release excess energy
  3. Whisk the ricotta in a large bowl until smooth
  4. Add the eggs and whisk to combine
  5. Using a wooden spoon, add the flour, a little at a time, working it into the ricotta
  6. Finely chop the lemon zest and add to the mix with the sugar and melted butter and beat until combined
  7. Place vegetable oil in a large saucepan about 2cm deep
  8. Heat the oil and then add a spoonful of the ricotta mix
  9. Cook until lightly golden all over
  10. Remove with a slotted spoon and drain on kitchen paper
  11. Continue cooking until all the batter is used
  12. Mix together the cinnamon and sugar
  13. Serve the ricotta fritters while still warm with sliced figs
  14. Sprinkle with the cinnamon sugar and drizzle over some honey
