Chicken tortilla

Ingredients

  • 1 clove garlic
  • 200g chicken breast meat, sliced
  • 25ml olive oil
  • 6 eggs
  • 1 teaspoon sea salt

Method

  1. Peel and finely dice the garlic and toss through the sliced chicken
  2. Heat the oil in a medium sized fry pan
  3. Add the chicken and sauté until cooked through
  4. Whisk the eggs with the salt and pour into the fry pan with the chicken
  5. Cook over a medium heat until the tortilla is almost set
  6. Place a plate over the top of the fry pan and very carefully flip the pan over so that the tortilla falls onto the plate
  7. Slide the tortilla back into the pan to finish cooking
  8. Serve with the olive, white bean and orange salad
  9. Get the kids to design their own flavoured tortillas using ingredients such as mushrooms, sausage, ham, potato etc
