Calamari with braised radicchio and spinach

Ingredients

  • 1 red onion
  • 2 cloves garlic
  • 2 chillies
  • 1 small radicchio
  • 150g baby spinach
  • 50ml olive oil
  • vino cotto/balsamic vinegar
  • 600g cleaned calamari tubes
  • salt and freshly ground black pepper

Method

  1. Peel and finely slice the onion, garlic and chillies
  2. Wash the radicchio and spinach and shred the radicchio into 1cm strips
  3. Heat the olive oil in a large frypan; add the onion, garlic and chillies and sauté until browned and soft
  4. Add the radicchio and spinach, cook until wilted, drizzle over some vino cotto or balsamic vinegar, set aside and keep warm
  5. Slice the calamari into rings and sauté in a large frypan over a high heat with a little olive oil for 1 minute
  6. Season with salt and pepper and then add to the radicchio and spinach mix
  7. Toss and serve immediately
